Heart-Healthy Recipe

Happy May everyone! Now that spring has officially sprung, we know that everyone’s schedule starts to fill up this time of year! That is no different for all of us here at Living for Zachary. We are attending local health fairs, educational community events, hosting heart screenings, and donating AED’s almost weekly this month and in the months to come. Throughout these busy months, it becomes so easy to just pull over on your way home and pick up fast food or go out to eat instead of cooking something at home! This month, we wanted to share with you a quick and easy heart-healthy recipe that you can make to keep you and your family healthy while remaining on schedule!

Chicken Avocado Burritos

Prep Time: 15 Min

Cook Time: 10 Min

Total Time: 25 Min

Ingredients

2 Cups cooked and shredded chicken with Salt and Pepper- to taste

1 Cup Grated Cheese (your choice of cheese)

1 Avocado- diced

2 Tablespoons of cilantro

4 large tortillas- whole grain

4 Tablespoons of Sour Cream (Light version)

1 Tablespoon Oil

Instructions

  1. Cook or bake your chicken with salt and pepper and make sure it is shredded into thin strings once it has been cooked thoroughly.

2. Mix the Chicken, cheese, cilantro and the diced avocado into a medium sized bowl.

3. Spread 1 tablespoon of sour cream on each tortilla, add ¼ of the mixture to each and roll them all up.

4. Heat 1 tablespoon olive oil into a pan and place all four of your tortillas on the pan, cook each side of your tortillas for 2 minutes on medium to high heat or until tortillas are golden.

5. Pair your tasty burrito with a side salad and your favorite veggies. Try using Salsa instead of Salad Dressing to add lots of flavor and fewer calories!
